Postre de Natas

Ingredients
4 - cups cream obtained from 4.5 litres of milk
1 1/2 - pounds of sugar
3 - cups of water
9 - egg yolks , beaten until spongy
1 - shot of rum
4 - tablespoons of raisins (optional)
Procedure
1. After obtaining the milk cream, place it in a wide but not deep pan. Allow
it to boil, remove it from the fire and let it cool down. Remove the curd with
a fork.
2. Fill the pan once again and repeat the procedure.
3. In a separate container, make the heavy syrup with the sugar and water until desired. Place the curds one by one take them apart.
4. In the mixer, beat the egg yolks until spongy and clear. Little by little pour in the previous mix. Cook at a low fire before boiling point. Remove and leave at rest.
5. Incorporate the rum, and optionally the raisins. Leave cooling.
